Ingredients:
- Cashews: 100 g (3.5 oz)
- Peanuts: 60 g (2 oz), fried
- Almonds: 30 g (1 oz), ground
- Cashews: 30 g (1 oz), ground
- Pumpkin seeds: 1 tbsp
- Mixed seeds: 1 tbsp
- Sesame seeds: 1 tbsp
- Dried cranberries: 50 g (1.1 oz), ground
- Cinnamon (optional): to taste
- Natural honey: 2 tbsp
- Sugar-free chocolate: 120 g (4.2 oz), ground
- Coconut oil: 1 tbsp
- Flaked salt (optional)
Instructions:
- Grind dry ingredients: Grind cashews (whole and ground portions), almonds, dried cranberries, and sugar-free chocolate separately.
- Mix dry ingredients: In a bowl, combine the ground nuts, mixed seeds, sesame seeds, and cinnamon (if using).
- Form the dough: Add honey and mix thoroughly until a dough forms. Shape the dough into rounds and place them on a baking sheet.
- Bake the cookies: Bake at 160°C (320°F) for 20 minutes.
- Make the chocolate dip: While the cookies cool, melt the sugar-free chocolate with coconut oil.
- Decorate the cookies: Dip each cookie halfway into the melted chocolate. Sprinkle with flaked salt (optional).
- Chill and serve: Chill the cookies in the fridge for 10 minutes before serving.
