Ingredients:

  • Cashews: 100 g (3.5 oz)
  • Peanuts: 60 g (2 oz), fried
  • Almonds: 30 g (1 oz), ground
  • Cashews: 30 g (1 oz), ground
  • Pumpkin seeds: 1 tbsp
  • Mixed seeds: 1 tbsp
  • Sesame seeds: 1 tbsp
  • Dried cranberries: 50 g (1.1 oz), ground
  • Cinnamon (optional): to taste
  • Natural honey: 2 tbsp
  • Sugar-free chocolate: 120 g (4.2 oz), ground
  • Coconut oil: 1 tbsp
  • Flaked salt (optional)

Instructions:

  1. Grind dry ingredients: Grind cashews (whole and ground portions), almonds, dried cranberries, and sugar-free chocolate separately.
  2. Mix dry ingredients: In a bowl, combine the ground nuts, mixed seeds, sesame seeds, and cinnamon (if using).
  3. Form the dough: Add honey and mix thoroughly until a dough forms. Shape the dough into rounds and place them on a baking sheet.
  4. Bake the cookies: Bake at 160°C (320°F) for 20 minutes.
  5. Make the chocolate dip: While the cookies cool, melt the sugar-free chocolate with coconut oil.
  6. Decorate the cookies: Dip each cookie halfway into the melted chocolate. Sprinkle with flaked salt (optional).
  7. Chill and serve: Chill the cookies in the fridge for 10 minutes before serving.
