Ingredients
– 2 beaten eggs
– 1 cup milk
– 2 teaspoons paprika
– ½ teaspoon poultry seasoning
– 4 teaspoons garlic salt
– 2 teaspoons black pepper
– 2 cups all-purpose flour
– Chicken pieces (legs, thighs, breasts, wings)
– Vegetable oil for frying

### Directions

#### Preparing the Egg Mixture
1. **Beat Eggs and Milk:**
– In a medium bowl, whisk together the 2 beaten eggs and 1 cup of milk until well combined.

#### Preparing the Seasoned Flour Mixture
2. **Combine Dry Ingredients:**
– In a large plastic bag, combine 2 cups of all-purpose flour, 4 teaspoons of garlic salt, 2 teaspoons of black pepper, ½ teaspoon of poultry seasoning, and 2 teaspoons of paprika.
– Shake the bag to ensure all the dry ingredients are well mixed.

#### Coating the Chicken
3. **Coat with Flour:**
– Place the chicken pieces in the bag with the seasoned flour mixture. Seal the bag and shake well until all the chicken pieces are thoroughly coated with the flour mixture.
4. **Dip in Egg Mixture:**
– Remove the flour-coated chicken pieces from the bag. Dip each piece into the egg and milk mixture, ensuring it is fully covered.
5. **Re-Coat with Flour:**
– Return the egg-coated chicken pieces back into the bag with the seasoned flour mixture. Seal the bag again and shake well to re-coat the chicken pieces with the flour mixture.

#### Frying the Chicken
6. **Heat the Oil:**
– In a large skillet, heat vegetable oil to 365°F (185°C). The oil should be deep enough to cover the chicken pieces halfway.
7. **Brown the Chicken:**
– Carefully place the coated chicken pieces in the hot oil. Brown the chicken on all sides, turning occasionally to ensure even cooking. This should take about 10 minutes.
8. **Cook Through:**
– Once the chicken is browned, reduce the heat to medium-low. Continue to cook the chicken for an additional 30 minutes or until it is cooked through. The internal temperature of the chicken should reach 165°F (74°C).

#### Finishing Touches
9. **Drain and Serve:**
– Remove the cooked chicken from the skillet and place it on paper towels to drain the excess oil.
– Serve hot and enjoy!

### Tips for Perfect Southern Fried Chicken:
– **Consistent Temperature:** Maintain the oil temperature around 365°F to ensure the chicken is crispy on the outside and cooked through on the inside.
– **Don’t Overcrowd:** Fry the chicken in batches if necessary to avoid overcrowding the skillet, which can lower the oil temperature and result in greasy chicken.
– **Rest Time:** Allow the coated chicken to rest for a few minutes before frying. This helps the coating adhere better and results in a crispier crust.

Enjoy your delicious Southern fried chicken!
