Shrimp & Avocado Salad

Ingredients:

– 2 avocados, diced
– 1 tablespoon fresh cilantro, chopped
– 2 cups lettuce, chopped
– 1/4 red onion, thinly sliced
– 3 tablespoons fresh-squeezed lime juice
– 1/4 teaspoon freshly cracked black pepper
– Salt and pepper, to taste
– 1/4 teaspoon sea salt
– 1 tablespoon olive oil
– 3 tablespoons extra-virgin olive oil
– 1 teaspoon ground cumin
– 1 pound shrimp, thawed, drained, and patted dry with paper towels

Instructions:

1. In a large mixing bowl, combine the diced avocados, chopped cilantro, lettuce, and sliced red onion.

2. In a small bowl, whisk together the lime juice, freshly cracked black pepper, sea salt, olive oil, extra-virgin olive oil, and ground cumin to make the dressing.

3. Pour the dressing over the avocado mixture and toss gently to coat everything evenly. Set aside.

4. Heat a skillet over medium-high heat. Add a drizzle of olive oil to the skillet.

5. Season the shrimp with salt and pepper to taste. Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side, or until they are pink and opaque.

6. Once the shrimp are cooked, remove them from the skillet and let them cool slightly.

7. Add the cooked shrimp to the avocado mixture and gently toss to combine.

8. Serve the shrimp avocado salad immediately, garnished with extra cilantro if desired.
