Seafood Salad Recipe

Ingredients:
– 1 lb mixed seafood (such as shrimp, calamari, and scallops), cleaned and cooked
– 1 cup cherry tomatoes, halved
– 1/2 cup red onion, thinly sliced
– 1/4 cup fresh parsley, chopped
– 1/4 cup fresh basil, chopped
– 1/4 cup Kalamata olives, pitted and halved
– 1/4 cup extra virgin olive oil
– 2 tbsp lemon juice
– 2 cloves garlic, minced
– Salt and black pepper to taste

#### Procedure:

**Step 1 – Prepare the Seafood:**
1. If not already cooked, clean and cook the mixed seafood according to your preference. You can boil, steam, or grill them until fully cooked. Once cooked, let them cool to room temperature.

**Step 2 – Prepare the Salad Ingredients:**
1. In a large mixing bowl, combine the cooked seafood, halved cherry tomatoes, thinly sliced red onion, chopped parsley, chopped basil, and halved Kalamata olives.

**Step 3 – Make the Dressing:**
1. In a small bowl, whisk together the extra virgin olive oil, lemon juice, minced garlic, salt, and black pepper until well combined.

**Step 4 – Assemble the Salad:**
1. Pour the dressing over the seafood and vegetable mixture in the large mixing bowl.
2. Gently toss all the ingredients together until everything is evenly coated with the dressing.

**Step 5 – Serve:**
1. Transfer the seafood salad to a serving dish or individual plates.
2. Garnish with additional chopped herbs if desired.
3. Serve immediately as a refreshing appetizer or main course.
