Quick n Healthy Mediterranean Chickpea Green Salad

Mediterranean Chickpea Green Salad is a vibrant, nutrient-packed dish bursting with flavors and textures. This salad is rich in fiber, vitamins, and minerals, providing a satisfying and nutritious meal option. It’s perfect for a light lunch or as a side dish with grilled chicken or fish.

 

INGREDIENTS:

– 1 can (15 ounces) chickpeas, drained and rinsed

– 2 cups mixed greens (spinach, kale, arugula)

– 1 cup cherry tomatoes, halved

– 1 cucumber, diced

– 1/2 red onion, thinly sliced

– 1/4 cup Kalamata olives, pitted and sliced

– 1/4 cup crumbled feta cheese

– 2 tablespoons chopped fresh parsley

– 2 tablespoons extra virgin olive oil

– 1 tablespoon lemon juice

– 1 clove garlic, minced

– Salt and pepper to taste

 

INSTRUCTIONS :

1. In a large mixing bowl, combine the chickpeas, mixed greens, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.

2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper to make the dressing.

3. Pour the dressing over the salad and toss gently to coat all the ingredients evenly.

4. Serve immediately or refrigerate for later.
