Potato Pancakes Recipe

Ingredients:
– 3-4 medium-sized potatoes, peeled and boiled
– Salt and pepper to taste
– 1 tablespoon of starch (cornstarch or potato starch)
– 1 tablespoon mayonnaise
– Oil for frying

Instructions:
1. Grate the boiled potatoes using a box grater or a food processor. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out excess moisture.

2. Transfer the squeezed potatoes to a mixing bowl. Add salt, pepper, starch, and mayonnaise to the grated potatoes. Mix well until all ingredients are evenly combined.

3. Heat a non-stick skillet or frying pan over medium heat and add enough oil to coat the bottom of the pan.

4. Once the oil is hot, take a spoonful of the potato mixture and carefully place it in the hot oil, flattening it slightly with the back of the spoon to form a pancake shape. You can also use your hands to shape the pancakes if preferred.

5. Fry the pancakes for 3-4 minutes on each side, or until they are golden brown and crispy.

6. Once cooked, transfer the potato pancakes to a plate lined with paper towels to drain any excess oil.

7. Serve the potato pancakes hot, with your choice of toppings such as sour cream, applesauce, or chopped green onions.
