Ingredients:

  • 1.5 cups of water (300 ml)
  • 1 egg
  • 1 teaspoon salt
  • 4 cups flour
  • 200 g butter or margarine (for lubricating)
  • 100 g feta cheese (for filling)
  • 1 egg yolk (for topping)

Directions:

  1. Prepare the Dough:
    • In a deep bowl, mix water and eggs together.
    • Gradually add salt and flour while stirring until a soft, non-sticky dough forms.
  2. Rest the Dough:
    • Divide the dough into 4 equal portions.
    • Cover the portions and let them rest for 10 minutes.
  3. Roll Out the Dough:
    • Roll out each portion into a 40 cm square on a lightly floured surface.
  4. Layer and Lubricate:
    • Spread softened butter or margarine evenly over the first sheet of dough.
    • Place another sheet of dough on top and repeat the buttering process.
    • Continue layering and buttering until all 4 sheets are stacked.
  5. Shape the Pastry:
    • Stretch the layered dough from the edges and place it in a square form.
    • Join the opposite edges in the middle and apply oil.
    • Repeat the process with the remaining edges, folding the dough into a square shape each time.
  6. Chill the Dough:
    • Cover the folded dough and refrigerate for 1 hour.
  7. Roll and Cut:
    • Roll out the chilled dough on a lightly floured surface into a square shape.
    • Cut the dough in half, then slice each half into 7 pieces, resulting in a total of 14 strips.
    • Make small cuts on the ends of each strip.
  8. Fill and Shape:
    • Place a small amount of feta cheese on the uncut end of each strip.
    • Fold the pastry over the cheese to form a triangle shape, sealing the edges.
  9. Prepare for Baking:
    • Place the filled pastries on a baking tray lined with parchment paper.
    • Brush the tops of the pastries with egg yolk for a golden finish.
  10. Bake:
    • Preheat the oven to 180 degrees Celsius.
    • Bake the pastries in the preheated oven until they turn golden brown.
  11. Serve and Enjoy:
    • Once baked, let the pastries cool slightly before serving.
