Master Chef’s Doughnut Recipe

Ingredients:

  • 3 cups cake flour
  • 1 or 2 cups warm milk
  • 1 egg
  • 1 tsp salt
  • 1 1/2 tsp yeast
  • 65g butter
  • 6 tsp sugar

Method:

  1. Prepare the Dough:
    • In a large mixing bowl, combine the cake flour, warm milk, egg, salt, yeast, butter, and sugar.
    • Mix until a soft dough forms. Add more milk if necessary to achieve the right consistency.
  2. Knead the Dough:
    • Transfer the dough to a lightly floured surface.
    • Knead the dough for 10-15 minutes until it becomes smooth and elastic.
  3. Let the Dough Rise:
    • Place the kneaded dough in a dish and cover it with cling film.
    • Allow the dough to rise for a couple of hours until it doubles in size.
  4. Shape the Doughnuts:
    • After the dough has risen, roll it out on a floured surface to a certain thickness.
    • Use a doughnut cutter to cut out doughnuts, or roll the dough into long strips for cream doughnuts, or make small balls for jam doughnuts.
  5. Second Rise:
    • Place the shaped doughnuts on a baking tray lined with parchment paper.
    • Let the doughnuts rise again for about an hour or two until they puff up.
  6. Fry the Doughnuts:
    • In a deep frying pan, heat oil over medium to high heat.
    • Fry the doughnuts in batches until they turn golden brown on both sides.
    • Ensure not to fry them on low heat to avoid them becoming oily.

Variations:

Cream Doughnuts: 7. Assemble and Decorate:

  • Once fried, let the doughnuts cool down.
  • Cut them in half horizontally but not all the way through.
  • Pipe fresh whipped cream into the center of each doughnut.
  • Decorate with a glazed cherry and a sprinkle of icing sugar.

Sugar Doughnuts: 8. Coat with Sugar Mix:

  • Mix sugar and cinnamon powder in a bowl.
  • Toss the freshly fried doughnuts in the sugar mixture while they are still hot.

Glazed Doughnuts: 9. Prepare Glaze:

  • Mix icing sugar, water, and a few drops of vanilla essence or food color in a bowl.
  1. Coat and Decorate:
    • Dip half of each cooled doughnut into the glaze.
    • Sprinkle 100s and 1000s over the glazed portion for decoration.

Jam Doughnuts: 11. Fill with Jam: – Roll the freshly fried doughnuts in the sugar-cinnamon mix. – Make a hole at the bottom of each doughnut and fill it with your favorite jam.

Coffee Doughnuts: 12. Prepare Coffee Glaze: – Mix icing sugar, butter, coffee, and chocolate together until smooth. 13. Coat and Drizzle: – Dip half of each cooled doughnut into the coffee glaze. – Drizzle white chocolate over the glazed portion for an extra decadent touch.
