Ingredients

– **Ground beef**: 2 pounds (preferably 80% lean)
– **Almond flour**: 1/2 cup
– **Parmesan cheese**: 1/2 cup, grated
– **Eggs**: 2 large
– **Onion**: 1 medium, finely chopped
– **Garlic**: 3 cloves, minced
– **Dried oregano**: 1 teaspoon
– **Dried thyme**: 1 teaspoon
– **Salt**: 1 teaspoon
– **Black pepper**: 1/2 teaspoon
– **Worcestershire sauce**: 1 tablespoon
– **Tomato paste**: 2 tablespoons
– **Heavy cream**: 1/4 cup
– **Sugar-free ketchup**: 1/4 cup (for topping)

### Instructions

#### Step 1: Preheat and Prepare

1. **Preheat the Oven**: Preheat your oven to 375°F (190°C).
2. **Prepare the Pan**: Line a baking sheet with parchment paper or lightly grease a loaf pan.

#### Step 2: Mix the Ingredients

1. **Combine Dry Ingredients**: In a large mixing bowl, combine the almond flour and grated Parmesan cheese.
2. **Add the Aromatics**: Add the finely chopped onion, minced garlic, dried oregano, dried thyme, salt, and black pepper to the bowl.
3. **Incorporate the Wet Ingredients**: Add the Worcestershire sauce, tomato paste, heavy cream, and eggs to the mixture. Mix well to combine.
4. **Add the Meat**: Gently fold in the ground beef. Mix until all ingredients are just combined. Avoid overmixing to keep the meatloaf tender.

#### Step 3: Shape and Bake

1. **Shape the Meatloaf**: Transfer the meat mixture to the prepared baking sheet or loaf pan. Shape it into a loaf shape if using a baking sheet.
2. **Top with Ketchup**: Spread the sugar-free ketchup evenly over the top of the meatloaf.
3. **Bake**: Place the meatloaf in the preheated oven and bake for 60-70 minutes, or until the internal temperature reaches 160°F (71°C).

#### Step 4: Rest and Serve

1. **Rest the Meatloaf**: Once done, remove the meatloaf from the oven and let it rest for 10 minutes. This helps the juices redistribute throughout the loaf.
2. **Slice and Serve**: Slice the meatloaf into desired portions and serve.

### Serving Suggestions

This Keto Meatloaf pairs perfectly with a side of cauliflower mash, roasted vegetables, or a fresh green salad. For an extra kick, serve it with a dollop of sugar-free ketchup or mustard.

### Fun Tips and Variations

– **Cheese Lover’s Delight**: Add a layer of cheese in the middle of the meatloaf. Simply divide the meat mixture in half, place half in the pan, add a layer of cheese, and top with the remaining meat mixture.
– **Bacon-Wrapped**: For an added flavor boost, wrap the meatloaf in bacon strips before baking.
– **Spice It Up**: Add a pinch of chili flakes or some diced jalapeños to the mixture for a spicy kick.
