Beef Quesadillas Recipe
Ingredients:
- 1 shallot
- 1 tbsp olive oil
- 450g Ground beef (extra lean for the win!)
- Salt & black pepper (to taste)
- 1 tbsp chili powder
- 1/2 tsp dried oregano
- 1 tsp ground chipotle chili pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp ground cayenne pepper (or to taste, depending on your spice tolerance)
- 1 tbsp tomato paste
- 2 tbsp beef stock or broth
- Coriander (optional, but adds a nice touch)
- 85g cheddar cheese
- 85g Monterey Jack cheese
- 85g mozzarella cheese
- 6 flour tortillas
Instructions:
- Preheat the Oven (or Pan):
- If baking, preheat your oven to 400°F (200°C). If you prefer the stovetop method, just heat up a skillet over medium heat.
- Prep Work:
- Finely chop the shallot and gather all your ingredients. Shred the cheeses, and you’re ready to roll (or fold, in this case).
- Cook the Ground Beef:
- Heat the olive oil in a skillet over medium heat.
- Toss in the chopped shallot and sauté until softened and fragrant.
- Add in the ground beef, breaking it apart with a spatula.
- Cook it up until it’s no longer pink, about 8-10 minutes. Remember to stir occasionally to ensure even cooking.
- Season It Up:
- Once the beef is cooked through, season it generously with salt and black pepper.
- Sprinkle in the chili powder, dried oregano, ground chipotle chili pepper, garlic powder, onion powder, and ground cayenne pepper. Mix it all together.
- Stir in the tomato paste and beef stock to give it that rich, saucy goodness.
- Optional: Throw in some chopped coriander for that extra burst of flavor.
- Assemble Your Quesadillas:
- Lay out your flour tortillas like a little assembly line.
- Sprinkle a generous amount of the seasoned beef mixture onto one half of each tortilla.
- Top the beef with a heavenly blend of cheddar, Monterey Jack, and mozzarella cheeses.
- Fold the tortillas over to create a semi-circle shape, sealing in all that cheesy, beefy goodness.
- Cook ‘Em Up:
- If baking, pop those beauties onto a baking sheet and into the preheated oven for 5-7 minutes, or until the cheese is melted and the tortillas are crispy.
- If you’re opting for the stovetop method, heat a skillet over medium heat and pan-fry each quesadilla for about 2 minutes per side, until golden brown and crispy.
- Serve and Enjoy:
- Once they’re done, let them cool for just a minute or two (if you can resist the temptation), then slice them into wedges.
- Serve them up with your favorite dipping sauces like salsa, guacamole, or sour cream.
