Grandma’s Meatloaf Recipe

#### Ingredients

**For the Minced Meat:**
– 1.1 kg ground beef (veal)
– 130 g grated dry toast (breadcrumbs)
– 2 grated onions
– 20 g finely chopped parsley
– 1 egg
– Salt and pepper to taste

**Besides That:**
– 6-8 slices of cooked ham
– 8 slices of cheese
– 10 eggs for the egg yolk
– 1 bowl of finely chopped root vegetables (carrots, celery, leeks, red onions, garlic, and rosemary)
– Vegetable oil for frying
– 2 tbsp tomato paste
– 1.5 l beef broth
– 100 g breadcrumbs
– 120 g melted butter
– 1 tbsp finely chopped parsley

### Instructions

#### 1. Prepare the Eggs
1. **Separate the Eggs:**
– Separate the 10 eggs, keeping the yolks and whites separate.
2. **Cook the Egg Yolks:**
– Mix the egg yolks and pour them through a sieve into small, greased glasses.
– Cover and cook them in a water bath at 80°C (176°F) for 40 minutes until set. The water should not boil.

3. **Add the Egg Whites:**
– Once the yolks are set, carefully place them in slightly larger, greased glasses.
– Sieve the egg whites and pour them into the glasses with the yolks.
– Cover and cook in a water bath for 60-90 minutes, then let them cool slightly.

#### 2. Prepare the Meatloaf Mixture
1. **Mix the Meat:**
– In a large bowl, combine 1.1 kg ground beef, 130 g grated dry toast, 2 grated onions, 20 g finely chopped parsley, 1 egg, salt, and pepper. Mix until well combined.

2. **Layer with Cheese and Ham:**
– Spread the meat mixture evenly on a large piece of baking paper.
– Layer the meat first with 8 slices of cheese, then with 6-8 slices of cooked ham.

3. **Add the Cooked Eggs:**
– Carefully remove the warm eggs from the glasses and place them in the center of the meat mixture.
– Using the baking paper, roll up the meat mixture around the eggs, ensuring it is firmly packed and sealed at the edges.

#### 3. Cooking the Meatloaf
1. **Fry the Meatloaf:**
– Heat some vegetable oil in a large pan.
– Fry the meatloaf on all sides until browned.

2. **Add Vegetables and Broth:**
– Add the chopped root vegetables, 2 tbsp tomato paste, and a pinch of salt to the pan. Fry briefly.
– Pour in 1.5 l beef broth and let it simmer briefly.

3. **Bake the Meatloaf:**
– Preheat your oven to 180°C (350°F).
– Mix 100 g breadcrumbs, 120 g melted butter, and 1 tbsp finely chopped parsley. Spread this mixture over the meatloaf.
– Transfer the meatloaf and vegetables to a baking dish and bake for 30 minutes.

#### 4. Serve and Enjoy!

– Once baked, let the meatloaf rest for a few minutes before slicing.
