Ingredients:

  • 1 pound (450g) chicken breast, chopped into bite-size pieces (2-3 medium chicken breasts)
  • 1 cup broccoli florets
  • 1 zucchini, chopped
  • 1 cup bell pepper, chopped
  • 1/2 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon salt or crumbled bouillon cube
  • 1/2 teaspoon pepper
  • 1 tablespoon Italian seasoning (or any other spice blend of choice)
  • 1 tablespoon fresh chopped parsley, for garnish
  • 1/2 teaspoon red chili pepper flakes, optional

Step 1: Preheat Your Air Fryer

  • Preheat your air fryer to 360°F (180°C) for about 3-5 minutes. This ensures it’s hot and ready to cook your delicious meal.

Step 2: Prepare the Chicken and Vegetables

  1. Chop and Prep: Chop the chicken breast into bite-size pieces. Chop the zucchini, bell pepper, and onion into similar-sized pieces. Mince the garlic cloves.
  2. Seasoning: In a large bowl, toss the chopped chicken, broccoli florets, zucchini, bell pepper, onion, and minced garlic with olive oil, Cajun seasoning, salt or crumbled bouillon cube, pepper, and Italian seasoning until everything is evenly coated. If you like it spicy, add the red chili pepper flakes.

Step 3: Air Fry!

  • Layering: Place the seasoned chicken and vegetables in the air fryer basket in a single layer. Avoid overcrowding to ensure even cooking.
  • Cooking: Cook at 360°F (180°C) for about 10-12 minutes, shaking the basket halfway through the cooking time to ensure even cooking.

Step 4: Garnish and Serve

  • Check for Doneness: Once the cooking time is up, check if the chicken is cooked through and the vegetables are tender.
  • Garnish: Sprinkle fresh chopped parsley over the cooked chicken and vegetables for a pop of color and freshness.
  • Serve: Plate your delicious air-fried chicken and veggies and enjoy immediately! You can serve it as is or with a side of rice, quinoa, or your favorite dipping sauce.
