Ingredients:
– 2 tablespoons olive oil
– 1 pound beef stew meat, cut into bite-sized pieces
– 1 teaspoon onion powder
– 2 onions, thinly sliced
– 3 cloves garlic, minced
– 1 teaspoon thyme
– Salt and pepper to taste
– 2 cups beef broth
– 8 ounces pasta (such as penne or fusilli)
– 1 cup shredded Gruyere cheese
– Fresh parsley for garnish (optional)

Instructions:
1. Heat olive oil in a large skillet over medium-high heat. Add the beef stew meat and cook until browned on all sides, about 5 minutes. Sprinkle with onion powder, then remove from the skillet and set aside.
2. In the same skillet, add the sliced onions and cook until caramelized, about 10 minutes, stirring occasionally. Add garlic, thyme, salt, and pepper, and cook for another 2 minutes.
3. Return the beef to the skillet and pour in the beef broth. Bring to a simmer and cook for 15-20 minutes, or until the beef is tender and the sauce has thickened slightly.
4. While the beef is simmering, cook the pasta according to package instructions until al dente. Drain and set aside.
5. Preheat the broiler. Stir the cooked pasta into the beef mixture until well combined. Transfer the mixture to a baking dish and sprinkle the shredded Gruyere cheese on top.
6. Place the baking dish under the broiler and broil until the cheese is melted and bubbly, about 2-3 minutes.
7. Remove from the oven, garnish with fresh parsley if desired, and serve hot.
