Ingredients :
– 300g all-purpose flour
– 3 large eggs
– 60g granulated sugar
– 200ml whole milk
– 125g plain yogurt (1 small pot)
– 60ml vegetable oil (or melted butter)
– 2 sachets of vanilla sugar (typically around 8g each, totaling 16g)
– 1 sachet of baking powder (11g)
– A pinch of salt (optional but enhances flavor)

#### Directions:

1. **Mixing the Wet Ingredients:**
– In a large mixing bowl, crack the 3 eggs. Add the granulated sugar to the eggs.
– Using a whisk or electric mixer, beat the eggs and sugar together until the mixture is light, fluffy, and pale in color. This step helps to incorporate air into the batter, contributing to the fluffiness of the pancakes.

2. **Adding Flavor:**
– Add the 2 sachets of vanilla sugar to the egg and sugar mixture. Stir well to combine, ensuring the vanilla flavor is evenly distributed.

3. **Combining Wet and Dry Ingredients:**
– Add the 60ml of vegetable oil (or melted butter), 125g of plain yogurt, and 200ml of milk to the mixture. Whisk together until smooth.
– In a separate bowl, sift together the 300g of all-purpose flour, the 11g sachet of baking powder, and a pinch of salt if using. Sifting helps to prevent lumps and ensures an even distribution of the baking powder.

4. **Creating the Batter:**
– Gradually add the dry ingredients to the wet mixture, folding gently with a spatula or mixing on a low speed. Be careful not to overmix; stop once the batter is smooth and free of large lumps. Overmixing can lead to tough pancakes.

5. **Resting the Batter:**
– Let the batter rest for about 5 minutes. This allows the flour to fully hydrate and the baking powder to start working, contributing to the fluffiness.

6. **Cooking the Pancakes:**
– Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with a small amount of oil or butter.
– Once the pan is hot, pour about 1/4 cup of batter onto the skillet for each pancake. Spread the batter slightly if needed to form an even circle.
– Cook until bubbles form on the surface of the pancakes and the edges look set, about 2-3 minutes. Flip the pancakes and cook for another 1-2 minutes, or until golden brown and cooked through.

7. **Serving:**
– Serve the pancakes warm with your favorite toppings. Classic options include butter, maple syrup, fresh berries, whipped cream, or a dusting of powdered sugar.

### Tips for Perfect Pancakes:
– **Temperature Control:** Ensure your pan isn’t too hot. Medium heat allows the pancakes to cook through without burning the outside.
– **Even Cooking:** Use a ladle or measuring cup to pour the batter to keep the pancakes a uniform size.
– **Patience:** Only flip the pancakes once the bubbles on the surface have popped and the edges are set to ensure they cook evenly.

Enjoy your soft, fluffy, and delicious pancakes!
