Ingredients:
– 3-4 large russet potatoes, washed and cut into wedges
– 3 cloves garlic, minced
– 1 teaspoon cumin
– 1 teaspoon paprika
– 1 teaspoon oregano
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/4 cup olive oil
– Juice of 1 lime
– Zest of 1 lime
– Chopped fresh cilantro (optional, for garnish)

Instructions:
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.

2. In a large mixing bowl, combine the minced garlic, cumin, paprika, oregano, salt, black pepper, olive oil, lime juice, and lime zest. Mix well to combine all the flavors.

3. Add the potato wedges to the bowl with the mojo marinade. Toss the potatoes until they are evenly coated with the mixture.

4. Arrange the coated potato wedges in a single layer on the prepared baking sheet.

5. Place the baking sheet in the preheated oven and bake for 30-35 minutes, or until the potatoes are golden brown and crispy on the outside, and tender on the inside. You can flip them halfway through the baking process for even cooking.

6. Once the mojo potatoes are cooked to perfection, remove them from the oven and transfer them to a serving platter.

7. Garnish the mojo potatoes with chopped fresh cilantro, if desired, for added freshness and flavor.
