Cowboy Meat Loaf & Potato Casserole

**Ingredients:**

For the Meatloaf:
– 1 pound ground beef
– 1 onion, chopped
– 2 garlic cloves, chopped
– 1/2 cup breadcrumbs
– 1/4 cup ketchup
– 1 egg
– 1 tablespoon Worcestershire sauce
– 1 teaspoon dried oregano
– Salt and pepper to taste

For the Potato Casserole:
– 4 large potatoes, peeled and thinly sliced
– 1 cup shredded cheddar cheese
– 1/2 cup milk
– 2 tablespoons butter
– Salt and pepper to taste
– Optional toppings: chopped green onions, cooked bacon bits

**Instructions:**

1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish or casserole dish with cooking spray or butter.

2. In a large mixing bowl, combine the ground beef, chopped onion, chopped garlic, breadcrumbs, ketchup, egg, Worcestershire sauce, dried oregano, salt, and pepper. Mix until all ingredients are well combined.

3. Transfer the meatloaf mixture into the prepared baking dish and shape it into a loaf shape, ensuring it fits well in the dish.

4. In a separate mixing bowl, combine the thinly sliced potatoes, shredded cheddar cheese, milk, butter, salt, and pepper. Mix until the potatoes are evenly coated with the cheese mixture.

5. Arrange the potato mixture evenly around the meatloaf in the baking dish.

6. Cover the baking dish with aluminum foil and bake in the preheated oven for about 45 minutes.

7. After 45 minutes, remove the aluminum foil and continue baking for an additional 15-20 minutes, or until the meatloaf is cooked through and the potatoes are tender.

8. Once cooked, remove the Cowboy Meatloaf and Potato Casserole from the oven and let it rest for a few minutes before serving.

9. Optionally, garnish with chopped green onions and cooked bacon bits before serving for an extra burst of flavor.
