Ingredients:

For the Cake:

  • 8 cups all-purpose flour (8 1/2 for high altitude)
  • 8 cups lightly packed brown sugar (7 1/2 for high altitude)
  • 2 tsp cinnamon
  • 2 cups cold butter, cut into pieces
  • 4 eggs
  • 4 cups full-fat sour cream
  • 4 tsp baking soda (3 1/2 tsp for high altitude)
  • 1/2 cup whole milk
  • 6 cups mini chocolate chips

For the Frosting:

  • 1/2 cup butter
  • 12 oz full-fat cream cheese
  • 1/2 cup packed light brown sugar
  • 1 tsp vanilla
  • 2 lbs powdered sugar (give or take)
  • 2 tsp cinnamon

Instructions:

1. Preparing the Cake:

Preheat your oven to 325°F (25 degrees hotter for high altitude – use an oven thermometer)

  • Step 1: In a mixer with the whisk attachment, add the flour, sugar, and cinnamon.
  • Step 2: Add the cold butter pieces and mix on high until the butter is the size of peas. Stop before it starts to warm and cream.
  • Step 3: Add the eggs one at a time, mixing between each addition.
  • Step 4: In a medium-sized bowl, mix the baking soda and sour cream. Let it sit for 3 minutes to expand.
  • Step 5: Add the sour cream mixture into the batter along with the milk and stir until just evenly moistened.
  • Step 6: Stir in the mini chocolate chips until evenly distributed. The batter will be thick.
  • Step 7: Spread the batter into three 8 or 9-inch pans and bake until a toothpick comes out clean, about an hour (50 minutes for high altitude).

2. Preparing the Frosting:

  • Step 1: Melt the butter and brown sugar together until the brown sugar dissolves. Let it cool to room temperature.
  • Step 2: Beat the cream cheese until creamy.
  • Step 3: Pour the cooled brown sugar mixture into the cream cheese and beat until smooth.
  • Step 4: Mix in the vanilla.
  • Step 5: Add half of the powdered sugar and cinnamon and beat.
  • Step 6: Gradually add more powdered sugar, 1 cup at a time, until you’re happy with the thickness of the frosting.

3. Assembling the Cake:

  • Step 1: Level the cakes (you can also trim the bottom to get rid of the dark outside).
  • Step 2: Place one cake on the cake plate and add 1 cup of frosting, spread evenly. Repeat this step for the second layer.
  • Step 3: Add the final layer of cake.
  • Step 4: Frost the outside of the cake and decorate it as you like. Extra mini chocolate chips make a delicious topping!
