Cajun Chicken & Shrimp Alfredo

Ingredients:

For Cajun Seasoning:
– 1 tablespoon paprika
– 1 tablespoon garlic powder
– 1 tablespoon onion powder
– 1 tablespoon dried oregano
– 1 tablespoon dried thyme
– 1 teaspoon cayenne pepper
– 1 teaspoon black pepper
– 1 teaspoon white pepper
– 1 teaspoon salt

For the Alfredo Sauce:
– 4 tablespoons unsalted butter
– 4 cloves garlic, minced
– 2 cups heavy cream
– 1 cup grated Parmesan cheese
– Salt and pepper to taste

For the Chicken & Shrimp:
– 2 boneless, skinless chicken breasts, sliced into thin strips
– 1 pound large shrimp, peeled and deveined
– 2 tablespoons Cajun seasoning (adjust to taste)
– 2 tablespoons olive oil

Other Ingredients:
– 12 ounces fettuccine pasta
– Chopped fresh parsley for garnish
– Grated Parmesan cheese for serving

Instructions:

Prepare Cajun Seasoning:
1. In a small bowl, mix together all the ingredients for the Cajun seasoning. Set aside.

Cook the Pasta:
2. Cook the fettuccine pasta according to the package instructions until al dente. Drain and set aside, reserving some pasta water.

Prepare Alfredo Sauce:
3. In a large skillet or saucepan, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
4. Pour in the heavy cream and bring to a simmer. Let it cook for a few minutes until slightly thickened.
5. Gradually whisk in the grated Parmesan cheese until smooth and creamy. Season with salt and pepper to taste. Keep warm over low heat.

Prepare Chicken & Shrimp:
6. Season the chicken strips and shrimp with the Cajun seasoning, making sure to coat them evenly.
7. In a separate skillet, heat olive oil over medium-high heat. Add the seasoned chicken strips and cook until browned and cooked through, about 4-5 minutes per side. Remove from the skillet and set aside.
8. In the same skillet, add the seasoned shrimp and cook until pink and cooked through, about 2-3 minutes per side. Remove from the skillet and set aside.

Assemble Cajun Chicken & Shrimp Alfredo:
9. Add the cooked pasta to the skillet with the prepared Alfredo sauce. Toss to coat the pasta evenly with the sauce. If the sauce is too thick, you can add some reserved pasta water to thin it out.
10. Add the cooked chicken strips and shrimp to the skillet with the pasta and sauce. Gently toss to combine and heat through.

Serve:
11. Serve the Cajun Chicken & Shrimp Alfredo hot, garnished with chopped fresh parsley and grated Parmesan cheese. Enjoy your delicious and flavorful meal!
