Ingredients:
- 4 medium potatoes
- 2 eggs
- Frying oil
Spices:
- 1/2 tsp salt
- 1 tsp chili powder
- 1/2 tsp oregano
- 1/2 tsp garlic powder
- 1/2 cup / 65g all-purpose flour
Dip Sauce (Optional):
- 1 small shallot, finely chopped
- 1 tbsp capers, chopped
- Chives (optional), chopped
- 2 tbsp mayonnaise
- 1 tbsp ketchup
- 1 tsp Sriracha
- Black pepper, to taste
Instructions:
Step 1: Prepare the Potatoes
- Peel and Slice: Peel the 4 medium potatoes and cut them into thin slices. You can use a mandoline slicer for even slices or just a good old knife.
- Soak in Water: Place the potato slices in a bowl of cold water. This removes excess starch and helps in making the potatoes extra crispy.
Step 2: Prepare the Egg Mixture
- Beat the Eggs: In a bowl, crack the 2 eggs and beat them until well combined.
- Add Spices: Add the salt, chili powder, oregano, and garlic powder to the beaten eggs. Mix well.
Step 3: Coat the Potatoes
- Dry the Potatoes: Drain the soaked potatoes and pat them dry with a kitchen towel. You want them as dry as possible for the best crispiness.
- Flour the Potatoes: Put the 1/2 cup of all-purpose flour in a large ziplock bag. Add the potato slices, seal the bag, and shake well until all slices are evenly coated with flour.
- Dip in Egg Mixture: Dip the flour-coated potato slices into the egg mixture, ensuring each slice is well-coated.
Step 4: Fry the Potatoes
- Heat the Oil: Pour enough frying oil into a large frying pan to cover the bottom. Heat it over medium-high heat until it’s hot (around 350°F or 175°C).
- Fry the Potatoes: Carefully place the egg-coated potato slices into the hot oil. Fry them in batches to avoid overcrowding the pan. Fry each side for about 2-3 minutes or until golden brown and crispy.
- Drain Excess Oil: Use a slotted spoon to remove the crispy potatoes from the oil and place them on a plate lined with paper towels to drain any excess oil.
Step 5: Make the Dip Sauce (Optional)
- Chop and Mix: Finely chop the small shallot, capers, and chives (if using). Mix them in a bowl with mayonnaise, ketchup, and Sriracha.
- Season: Add black pepper to taste and mix well. Your tangy and spicy dip sauce is ready!

- Plate the Potatoes: Transfer the crispy potato slices to a serving platter.
