Step 1: Preheat and Prepare
- Ingredients:
- 1 package (7.5 oz) Pillsbury biscuits
- Instructions:
- Preheat the oven to 350°F (175°C).
- Spray a 9×13 casserole dish with nonstick cooking spray and set it aside.
Step 2: Prepare Ingredients
- Ingredients:
- 5 eggs
- 3 egg whites
- 1 cup skim or 1% milk
- 8 oz diced cooked ham
- 1 cup diced peppers
- 3/4 cup diced onion
- 1 cup light grated cheese
- Instructions:
- Dice the onions, peppers, and ham.
- Cut the Pillsbury biscuits into 8 small pieces each.
Step 3: Assemble Casserole
- Instructions:
- Spread the cut dough pieces evenly over the bottom of the casserole dish.
- In a large bowl, whisk together the eggs and milk.
- Add the diced peppers, onions, ham, and 2/3 cup of cheese to the egg mixture, reserving the remaining 1/3 cup of cheese.
- Pour the egg mixture over the biscuit pieces, spreading it evenly.
Step 4: Bake
- Instructions:
- Bake in the preheated oven for 20 minutes.
- Remove from the oven and cover loosely with a piece of foil. Spray the foil with cooking spray to prevent sticking.
- Return the casserole to the oven and bake for an additional 25 minutes.
Step 5: Add Cheese Topping
- Instructions:
- Sprinkle the remaining 1/3 cup of cheese on top of the casserole.
- Leave the casserole in the oven uncovered for another 5 minutes, allowing the cheese to melt.
Step 6: Serve
- Instructions:
- Once baked, remove the casserole from the oven and let it cool slightly.
- Cut into 6 servings and serve warm.
