Ingredients
**For the Creamy Candied Pecans:**
– 1/2 cup brown sugar
– 1/4 cup sugar
– 1/4 cup heavy cream
– 2 tbsp butter
– 1 cup pecans
**For the Ice Cream:**
– 2 cups heavy cream
– 3/4 cup milk
– 3/4 cup sugar
– 2 tsp vanilla extract
– 1/4 cup caramel ice cream topping (plus more for serving)
### Instructions
**Note:** Make sure your ice cream canister is fully frozen before starting!
#### Step 1: Making the Pralines
1. **Gather Your Ingredients:**
– Brown sugar, white sugar, heavy cream, butter, and pecans.
2. **Combine and Heat:**
– In a heavy-bottomed skillet over medium heat, combine the brown sugar, 1/4 cup sugar, 1/4 cup heavy cream, and 2 tbsp butter.
– Bring the mixture to a boil.
3. **Caramelize:**
– Let it boil for about 3 to 4 minutes to lightly caramelize. Stir occasionally with a sturdy wooden spoon.
4. **Add Pecans:**
– Stir in the pecans and remove the skillet from the heat.
5. **Cool and Coat:**
– Keep stirring until the candy cools and the pecans are well-coated.
6. **Cool Completely:**
– Spoon the pecans onto a parchment-lined baking sheet and let them cool completely.
#### Step 2: Making the Ice Cream
1. **Combine Ingredients:**
– In a large bowl, whisk together 2 cups heavy cream, 3/4 cup milk, 3/4 cup sugar, and 2 tsp vanilla extract until the sugar is dissolved.
2. **Prepare Ice Cream Machine:**
– Turn on your ice cream machine.
3. **Pour Mixture:**
– Pour the cream mixture into the canister of your ice cream machine.
4. **Churn:**
– Process according to the manufacturer’s directions.
5. **Add Pralines and Caramel:**
– Just before finishing churning, add the cooled pralines and 1/4 cup caramel to the machine.
6. **Freeze:**
– Transfer the soft ice cream to a freezer-safe container (metal loaf pans work great), and freeze for at least 2 hours or until it reaches your desired consistency.
#### Step 3: Enjoy!
– **Serve:**
– Scoop the ice cream into bowls or cones.
– Drizzle with extra caramel sauce if desired.
#### Notes
**Without an Ice Cream Maker:**
– Follow the instructions above, but instead of using an ice cream maker, pour the mixture into a freezer-friendly bowl.
– Place the bowl in the freezer, covered, and stir every 30 minutes until the desired consistency is reached.
– Add the pecans and caramel topping just before the ice cream is fully frozen.
